The new special bread line at Europain and Interpack


At Europain in Paris, (Hall 4, Stand H52) and at Interpack in Dusseldorf (Hall 3, Stand D18), Rondo Doge will be displaying the new industrial bread line. It will be carrying out several demonstrations with dough each day, producing various different bread products from a dough band.

The trend is towards bread from a dough band

Industrially-made bread and rolls represent a growing market all over the world. Whereas systems with dough dividers have dominated the market for many years, a new trend is becoming discernible in industrial bread production: the production of bread from a continuous dough band. This type of production is finding increasing favour, on the one hand to fulfil the stringent quality demands on the baked products and on the other because market dynamics call for an especially flexible line.

Acknowledged advantages of bread production from a dough band

The quality of bread made from a dough band is demonstrably better than bread made with a dough divider. This is attributable to the exceptionally gentle processing of the dough which retains the gluten structure rather than damaging it. Added to this is the option to process doughs with a significantly higher water content and with a long bulk fermentation time, i.e. very soft doughs. This has a beneficial effect on the taste of the finished product.
Another benefit is the great flexibility of this type of bread line. Different sizes and bread types can be produced on just one line. The result is the ability to respond quickly to changing market conditions.
